I've caught a nasty bug. Don't know how it happened, really... don't much care, either. Just want to feel, you know, better.
Usually, when I feel this way, I want the simplest of foods. Toast, for example, slathered with butter and drunk with hot tea. Maybe a cup of tomato soup.
Ideally, of course, I'd make myself a big pot of Ash-e Resht-e, but who has that kind of energy? On the other hand, a pot of matzo ball soup is perfectly simple, delicious, and easy-peasy with a box of Manischewitz matzo meal in the cupboard.
So, tell me, what is your ideal get-well food?
Fatemeh's Matzo Ball Soup
- 1/2 c. matzo meal (Manischewitz makes it easy)
- 1/2 tsp salt
- 1 tbsp parsley, finely chopped
- 1 tsp garlic powder
- 2 tbsp canola oil
- 2 large eggs
- 2 tbsp + 8 c. chicken broth
- In a large bowl, combine the matzo meal and seasonings. Toss lightly to incorporate.
- Separately, beat the eggs together with the oil, and add to matzo meal mixture. Mix well, then add 2 tbsp of broth (some people will use seltzer water here).
- Lightly form the dough into about 8 balls. I can't emphasize how important it is to handle the dough lightly. Otherwise, you will get sinkers!*
- Refrigerate the matzo balls for 30-6o minutes.
- Bring the remaining broth (ideally homemade) to a boil in a very large pot. Reduce to a simmer, and drop the lightly handled balls into the broth.
- Cover, and let cook for 30-45 minutes.
*My friend's bubbe actually uses an ice cream scoop to make her matzo balls. Genius.
